Craving something sweet but short on time? This 3-minute vegan mug cake delivers a warm, fluffy dessert in just minutes. Made with simple plant-based ingredients, it’s single-serve, customizable, and perfect for satisfying quick cravings.
Lightly grease a microwave-safe mug with spray oil.
Add 5 tbsp All Purpose Flour, 3 tbsp White Sugar, 1/2 tsp Baking Powder, and 1/4 tsp Salt. Stir with a fork or spatula until evenly combined.
Pour in 2 tbsp Oil, 2 tbsp Plant-Based Milk, and 1 tsp Vanilla Extract. Stir until smooth and slightly thick, with no lumps. Fold in any optional mix-ins.
Microwave on high for 1–1 ½ minutes. Check the cake; if glossy, continue in 10-second intervals until set and slightly firm to the touch. Baker's Tip - I use a 900kw microwave. Check sooner if your microwave is more powerful.
Microwave tip: Taller mugs allow room for the cake to rise. I use a 350ml mug for my mug cakes. You can also use a ramekin. Microwave Power: This recipe was tested with a 900kw microwave. Adjust timings if your microwave wattage differs. Serving: Best enjoyed immediately while warm.Storage: Cool completely, cover with plastic wrap, and refrigerate 1–2 days. Reheat 10–20 seconds and fluff with a fork.Gluten-Free: Use a 1-to-1 gluten-free flour alternative.Sugar-Free: Swap sugar for your preferred alternative; texture may vary slightly.Flavour Options:
Fruity Fun: Stir in dried fruit, fresh berries, or berry compote.
Nutty Crunch: Add chopped nuts or seeds.
Fun & Festive: Use 1–2 tsp vegan sprinkles; for birthday cake flavour, try ½ tsp vanilla + ½ tsp almond extract.Quick Tip: Keep mix-ins simple - the recipe is designed to be fast, fuss-free, and ready in minutes.Nutrition: This is provided as a guide only based on the actual ingredients used to create this recipe.
