Small bites of coconut yumminess which are perfect for a grab and go snack. Vegan, gluten free, soy, peanut and tree nut free. School safe and kid approved. This no mess recipe is so easy to make in advance.
Combine the entire can of coconut condensed milk (240ml / 1 US Cup) and 200 grams (2 US Cups) of shredded coconut together in a bowl.
Using a small ice cream scoop, shape the mixture into balls and place them on a lined baking tray.
Place the baking tray in the fridge and allow to chill until the bliss balls are firm.
Place 100 grams (1 US Cup) of white chocolate chips in a microwave-safe bowl. Melt chocolate chips in the microwave at 30-second intervals and stir until the chocolate is smooth.
Using a fork, dip the coconut balls in the chocolate, ensuring that all sides are covered.
Allow to set on the baking tray then enjoy!

This recipe makes approx 15 coconut bliss balls. Feel free to make them larger or smaller depending on which scoop you use.
Feel free to swap out the chocolate for your favourite brand and drizzle extra on top of the outer layer has set. I also like adding freeze-dried berries to the top, gold leaf to fancy them up a bit and also sprinkles for special occasions.
If you can't find coconut condensed milk at your local store, Nature's Charm also sells oat-based condensed milk. And of course, if you are not dairy-free, sub with regular condensed milk.
This is a gluten-free recipe. Both the shredded coconut and coconut condensed milk are naturally gluten-free. Double-check the chocolate that you use. The brand that I prefer, Healthy Crunch, is gluten-free.
