Easy vegan and gluten-free chocolate bark made with crunchy pretzels, dark chocolate, vegan white chocolate, fresh pomegranate seeds and sea salt. Perfect for Thanksgiving, fall gatherings, sharing with friends, or homemade gifting.
Preheat your oven to its lowest temperature, approximately 175°F.
Line a baking tray with parchment paper. Use clips to hold the parchment in place if needed, but remove them before placing the tray in the oven.
Spread the gluten-free pretzels over the parchment in a single layer. Remove any pretzels that don't fit underneath the chocolate.
Place the dark chocolate bars over the pretzels.
Sprinkle some of the vegan white chocolate chips over the chocolate, reserving the rest for the topping.
Place the tray in the oven for approximately 12 minutes, or until the chocolate has softened and is loose enough to swirl. Keep a close eye on it as oven temperatures and chocolate can vary.
Remove the tray from the oven and immediately use a fork to gently swirl the melted dark and white chocolate together. Use light pressure so you don't disturb the pretzel base.
Sprinkle the remaining vegan white chocolate chips and pomegranate seeds over the chocolate. Finish with a light sprinkle of sea salt.
Allow the bark to set at room temperature or place it in the refrigerator for up to 1 hour, or until completely firm.
Once set, remove the bark from the parchment and break it into pieces.
Store in an airtight container in the refrigerator because this recipe contains fresh pomegranate seeds.
