This vegan pomegranate pretzel bark is an easy fall treat made with just a handful of ingredients. Crunchy gluten-free pretzels are covered with melted dark chocolate and swirled with vegan white chocolate, then topped with juicy pomegranate seeds and a sprinkle of sea salt.

It’s sweet, salty, crunchy and surprisingly simple to make. There are no complicated techniques or fancy equipment needed, and the whole thing comes together on one baking tray.
I love making this kind of chocolate bark for Thanksgiving because it feels a little special without requiring much effort. Break it into pieces and serve it as a dessert, add it to a holiday treat table, or package it up as a homemade edible gift.
And because bark is so forgiving, you can easily switch up the toppings depending on what you have in your pantry.
Why I Made This Pomegranate Pretzel Bark
I wanted to create a simple fall treat that would be easy to make with everyday ingredients while still feeling festive.
The combination of dark chocolate, salty pretzels, creamy white chocolate and fresh pomegranate seeds gives you a lovely mix of flavours and textures. The pomegranate adds little pops of colour and freshness, making this bark especially pretty for fall gatherings and Thanksgiving.
It’s also a great recipe to make when you don’t want to spend hours in the kitchen. The chocolate melts gently in the oven, everything gets swirled together on the same tray, and once it sets, you simply break it into pieces.

Ingredients

Gluten-Free Pretzels
These form the crunchy base of the bark. You can use pretzel twists, sticks or another gluten-free pretzel shape. Make sure they are suitable for your dietary requirements.
Vegan Dark Chocolate
I use vegan dark chocolate bars, but you can use your favourite vegan chocolate. Dark chocolate works particularly well with the salty pretzels and sweet toppings.
Vegan White Chocolate Chips
Some of the white chocolate is melted into the bark to create the swirled effect, while the rest is sprinkled over the top as a finishing touch.
Pomegranate Seeds
Fresh pomegranate seeds add colour, texture and a little burst of freshness to every bite.
Sea Salt
A light sprinkle of sea salt is optional, but I highly recommend it. It brings out the sweet and salty combination and works particularly well with the dark chocolate and pretzels.
Ingredient Substitutions
The beauty of chocolate bark is that you can easily adapt it to suit what you have available.
You can use a different type of vegan chocolate, or combine dark, milk-style and white vegan chocolate if you prefer.
You can also change the base or toppings. Try using gluten-free graham crackers, cereal or vegan marshmallows instead of pretzels, or add other toppings that you already have in your pantry.
If you need this recipe to remain gluten-free, always check the packaging of your chocolate, pretzels and other additions to make sure they are suitable.
How to Make Vegan Pomegranate Pretzel Bark
Prepare the Baking Tray
Preheat your oven to its lowest temperature. Mine is approximately 175°F.
Line a baking tray with parchment paper. If you have trouble keeping your parchment in place, you can use small clips to hold it down while you assemble the bark. Just make sure to remove them before placing the tray in the oven.
Add the Pretzels
Spread the gluten-free pretzels over the parchment paper in a single layer.

Try not to overlap the pretzels. You want them to create an even base underneath the chocolate.
Add the Chocolate
Place the dark chocolate bars directly on top of the pretzels.

Remove any excess pretzels that don’t fit underneath the chocolate. Keeping everything together in a relatively compact layer makes it easier to swirl the chocolate later.
Sprinkle some of the vegan white chocolate chips over the dark chocolate, reserving some for the topping.

Gently Melt the Chocolate
Place the tray in the oven and allow the chocolate to soften and melt gently.
This takes approximately 12 minutes in my oven, but the exact time will depend on your oven and the chocolate you’re using. Keep an eye on it rather than relying solely on the timing.

You’re looking for the chocolate to become soft and loose enough to swirl. It doesn’t necessarily need to look completely melted.
You can also melt the chocolate using a double boiler or microwave if you prefer, but I like the simplicity of letting it soften directly on the tray.
Swirl the Chocolate
Remove the tray from the oven and work straight away while the chocolate is still soft.
Using a fork, gently swirl the melted chocolate and white chocolate together. Move the fork lightly back and forth across the surface rather than pressing down firmly.
Because the pretzels are underneath the chocolate, you don’t want to disturb the pretzel base.
Add the Toppings
Sprinkle the remaining vegan white chocolate chips over the bark, followed by the pomegranate seeds.

Finish with a light sprinkle of sea salt.
The combination of sweet chocolate, salty pretzels and fresh pomegranate is what makes this bark so good.
Let the Bark Set
Leave the bark at room temperature until completely set, or place it in the refrigerator to speed things up.
In the refrigerator, it should take no more than about an hour to set.
Once the chocolate is firm, remove the parchment and break the bark into pieces.

Tips for Making Chocolate Bark
Don’t overcrowd the pretzels. Keep them in a single layer so that you get a good balance of chocolate and pretzel in every piece.
Work quickly once the chocolate comes out of the oven. It will begin to firm up again as it cools, so swirl it while it is still soft.
Use light pressure when swirling. You want to move the chocolate without disturbing the pretzels underneath.
Don’t worry about making it perfect. That’s part of the fun of bark! Once it has set and you break it into pieces, all those swirls and different shapes add to the homemade look.
Keep your toppings flexible. This is a great recipe for using up ingredients you already have in your pantry.
Ingredient Quantities
There are no exact measurements for most of the ingredients in this recipe. That’s one of the things I love about making bark! Simply use enough pretzels to cover your tray, then add as much white chocolate and pomegranate as you like. Want extra pomegranate? Go for it. Prefer more chocolate? Add more. This is definitely a measure with your heart kind of recipe.
Storage Tips
Because this version contains fresh pomegranate seeds, I recommend storing it in an airtight container in the refrigerator and enjoying it while the pomegranate is fresh.
If you are making a version without fresh fruit, the chocolate bark itself can be stored in an airtight, food-safe container at room temperature, provided your kitchen is cool enough to prevent the chocolate from melting.
If you live somewhere warm, refrigeration is the best option.

Common Bark Questions
Absolutely. You can melt the chocolate using a double boiler on the stovetop or in the microwave instead.
If melting the chocolate separately, spread your pretzels over the prepared baking tray, pour the melted chocolate over them and then add your white chocolate and toppings as directed.
Yes! Chocolate bark is incredibly versatile. Try adding vegan sprinkles or marshmallows, gluten-free cereal, chopped dried fruit or other suitable toppings. You can also change the type of chocolate or use a combination of dark and white chocolate.
Just remember that adding wet or fresh ingredients can affect how the bark stores.
Absolutely! This is a great recipe to make together because there are lots of fun jobs for little helpers, particularly adding the toppings once the chocolate has been swirled.
Breaking the finished bark into pieces is also part of the fun. It can get a little messy, but that’s all part of making homemade chocolate bark.
Gift Ideas
This makes such a fun homemade edible gift for Thanksgiving, Christmas or a birthday.
Break the bark into smaller pieces and place them in food-safe treat bags. Add a ribbon or seasonal label for a simple homemade gift that looks much more impressive than the amount of effort involved.
