Why I Made This Recipe

As someone with 19+ years of baking experience and a focus on allergy-friendly recipes, I adapted this bunny bait popcorn to be both fun and accessible for families with dietary needs.

Our kids love microwave popcorn, and I often add some to their lunchboxes for a less-bad treat. And when we discovered that there are a few dairy-free options available, it’s great to be able to add something ‘normal’ that doesn’t have ‘allergy-friendly’ written all over it.

I’d recently stocked up on some ingredients for my Easter cookie cake and Rice Krispies Treat recipes and decided to incorporate them with some popcorn to turn it into a fun snack. I love that it combines salty with sweet for a moreish snack and is so fun and colourful.

Ingredients and Substitutions

I kept it simple with the ingredients we had on hand, but feel free to sub anything for whatever you have in your pantry.

While measurements have been provided for the mixins, you can easily add more of everything to add even more colour and texture to the popcorn.

Popcorn: We used Sweet and Salty microwave popcorn by Orville Redenbacher. Always check ingredient labels, as many microwave popcorn options use dairy. My youngest son was so excited when we found this option!

Sprinkles: any type goes – the more colourful the better. Watch out for allergens in the ingredients, as many contain dairy and soy.

Freeze-Dried Marshmallows: I like the crunch they add, but regular marshmallows will also work.

Candies: Sub with jelly beans if you can’t find allergy-friendly Easter Egg candies. I find these in our local bulk store (Bulk Barn).

Chocolate Chips: I love the creaminess that white chocolate adds to this recipe. Sub with regular chocolate chips if preferred.

Bunny Bait Popcorn Variations

This versatile no-bake recipe is easily customizable, based on the ingredients you have on hand or the season that you are making it for. Try these variation suggestions:

  • Colour the white chocolate to add even more colour to the popcorn.
  • Use seasonal sprinkles to customize for birthdays, holidays, and more.
  • Add mini pretzels, cereal bites and different candies.

How to Make Bunny Bait

With a few simple steps, you’ll soon be enjoying this colourful popcorn treat. I recommend lining a 9×13 baking pan with parchment paper, as it is the easiest way to combine everything without a mess.

Start by microwaving the popcorn, following the directions on the packet. Dump all of the popcorn into the pan, removing any unpopped kernels.

Melt the white chocolate chips in a microwave-safe bowl at 30-second intervals, stirring after each interval, until the chocolate chips are fully melted.

Add the mini marshmallows, then pour the melted chocolate on top and stir with a spatula.

Stir everything together to combine, making sure the chocolate is evenly distributed throughout.

Allow to set at room temperature before breaking up into pieces.

Equipment

  • 9 x 13 Cake Pan
  • Parchment Paper
  • Spatula

Ingredients
  

  • 1 packet Microwave Popcorn (approx 8-10 cups popped)
  • 150 grams White Chocolate Chips 1 US Cup
  • 85 grams Sprinkles ½ US Cup
  • 40 grams Freeze Dried Marshmallows ¼ US Cup
  • 90 grams Easter Egg Candy ½ US Cup

Instructions
 

  • Prepare 1 packet Microwave Popcorn according to the package directions. Remove any unpopped kernels and place the popcorn in a parchment-lined baking pan. Add 40 grams Freeze Dried Marshmallows.
  • Add 150 grams White Chocolate Chips to a microwave-safe bowl. Heat in 30-second intervals, stirring each time, until fully melted. Pour over the popcorn and stir to combine.
  • Add 85 grams Sprinkles and 90 grams Easter Egg Candy to the popcorn. Toss or stir with a spatula to combine.
  • Allow the mixture to set at room temperature, then break into pieces and serve.

Notes

Yield: This recipe makes about 10 cups of bunny bait.
Popcorn Tips: We used Sweet and Salty Microwave Popcorn, as it is naturally dairy-free. Always double-check ingredient labels, as dairy can be hidden in flavourings and coatings.
Quantities: The quantities provided for the mix-ins are for reference only. Add as many candies, marshmallows and sprinkles as you desire. Feel free to add more melted chocolate as well. The key to bunny bait is to make it as fun as you like. 
Storage: Store the bunny bait in a large air-tight container for up to 5 days to retain freshness. If making ahead for Easter, bag up the popcorn for individual treats and gift-giving.
