Why I Made This Recipe

Living in a province that has an abundance of fresh fruit during the Summer months, our family has always wanted to visit a peach orchard. Luckily, we didn’t have to travel too far and spent a wonderful few hours at Parkway Orchards in Niagara on the Lake, Ontario. This dessert really showcases the peaches with some added spice to elevate the flavours, and I love that our kids were so eager to help make it, after picking the peaches themselves.

With nearly two decades of baking experience and a focus on allergy-friendly recipes, Iโ€™ve tested this crumble multiple times to make sure it works beautifully without gluten, dairy or eggs. Youโ€™ll find helpful tips throughout this post to ensure the best texture and flavour every time you make it.

Peaches are the epitome of Summer fruit, and this dessert is going to become a family favourite – trust me, we look forward to making it on repeat every peach season. Hereโ€™s why this peach crumble deserves a spot on your Summer baking list:

Ingredients and Substitutions

This recipe uses simple, accessible ingredients with easy swaps depending on your dietary needs. Iโ€™ve included both metric and US measurements, and below youโ€™ll find my recommended substitutions to help you get the best results.

For the Crumble Topping

Flour: I am using a 1-to-1 Gluten-Free Baking Blend. If you are not gluten-free, sub with all-purpose (plain) flour.

Butter: To add butteriness to the crumble, I am using unsalted plant-based butter. Sub with dairy butter if you are not dairy-free or vegan.

Sugar: For depth of flavour and extra sweetness, I am using brown sugar. Sub with golden or white sugar if that is all you have on hand. Brown sugar adds more of a caramel flavour, which I highly recommend.

Salt: This helps to balance the flavours. Omit if you are using salted butter.

For the Pie Filling

Peaches: Ensure that the peaches are ripe. This recipe uses 4 large peaches, which are approximately 800 grams. Sub with canned or frozen peaches if fresh ones are not available.

Cornstarch: This acts as a thickening agent for the pie filling.

Sugar: Ok, so I am obsessed with brown sugar and really feel that this helps elevate the moorishness of this dessert. Sub with white sugar if preferred.

Flavouring: The combination of cinnamon and vanilla bean paste helps to elevate the pie to the next level. Omit the cinnamon if required and substitute the vanilla bean paste with vanilla extract.

Salt: To balance the flavours.

Helpful Tips for the Best Peach Crumble

These simple tips will help you get the perfect texture and flavour every time:

  • Use ripe peaches: They should be slightly soft with a sweet aroma for the best flavour.
  • Donโ€™t skip the cornstarch: This helps thicken the filling so itโ€™s not too runny.
  • Keep the crumble slightly chunky: This creates that classic crisp texture once baked.
  • Let it rest before serving: This helps the filling set and makes it easier to scoop or slice.
  • Adjust sweetness if needed: Taste your peaches – if theyโ€™re extra sweet, reduce the sugar slightly.

How to Make Peach Crumble

This peach crumble comes together quickly, so start by preheating your oven and gathering your ingredients. Slightly softened butter will make it easier to create that perfect crumb texture – aim for soft, not melted.

In a mixing bowl, rub together the crumble topping ingredients until they form a fine crumbly mixture.

Cut each peach in half, remove the stone, then slice it into thin slices.

In a mixing bowl, add the sliced peaches, cornstarch, brown sugar, cinnamon, vanilla bean paste and salt. Combine until the peaches are fully coated.

Spread the peaches evenly in the pie dish, then add the crumble topping.

Bake the pie for approximately 45 minutes until the top is lightly golden.

Allow to cool slightly before serving. Or not! This crumble tastes so good right from the oven, but bear in mind that it will be easier to slice the crumble if you let it cool a bit first.

Peach Crumble FAQs

What size crumble does this recipe make?

I used a 9-inch pie dish for this recipe. You can also use an 8-inch dish if you prefer.

How should I store the crumble?

Allow the crumble to cool completely, then cover loosely with foil. Store in the fridge for 4-5 days. Slice and reheat in the microwave as required.

I’m not a fan of cinnamon with peaches – what can I use instead?

This recipe is packed with flavour, and you can simply omit the cinnamon if you don’t want to include it. We added it to spice it up slightly, but it’s not a deal breaker.

What should I serve with the crumble?

I recommend serving with peach crumble with vanilla ice cream, whipped cream, or hot vanilla custard (my favourite!).

Can I use canned peaches for this recipe?

Absolutely – just make sure they are well-drained to avoid excess liquid in the filling.

Weigh your dry ingredients in grams with a scale for best results!

Ingredients
  

For the Crumble Topping

  • 225 grams Gluten Free 1-to1 Flour (1.5 US Cups)
  • 170 grams Plant Based Butter (unsalted) (3/4 US Cup)
  • 105 grams Brown Sugar (1/2 US Cup)
  • ยฝ tsp Salt

For the Pie Filling

  • 4 Peaches (approx 800 grams)
  • 30 grams Cornstarch (1/4 US Cup)
  • 53 grams Brown Sugar (1/4 US Cup)
  • 1 tsp Cinnamon
  • 2 tsp Vanilla Bean Paste
  • ยฝ tsp Salt

Instructions
 

  • Preheat your oven to 340F / 170C. Gather all of the ingredients and allow the butter to soften slightly. Top tip – heat the butter gently in the microwave at 10-second intervals to speed up the wait time. It should be soft, not melted.
  • In a mixing bowl, rub together the crumble topping ingredients, 225 grams Gluten Free 1-to1 Flour, 170 grams Plant Based Butter (unsalted), 105 grams Brown Sugar and 1/2 tsp Salt, until you have a fine, crumbly texture.
  • Cut 4 Peaches in half, remove the stones, then slice them into thin, even wedges.
  • In a mixing bowl, combine the sliced peaches with 30 grams Cornstarch, 53 grams Brown Sugar, 1 tsp Cinnamon, 2 tsp Vanilla Bean Paste and 1/2 tsp Salt, until evenly coated.
  • Spread the peaches evenly in the pie dish then add the crumble topping.
  • Bake for 40-45 minutes until the topping is golden and the filling is bubbling.
  • Allow to cool slightly before serving.

Notes

Yield: Makes one 9-inch crumble (approximately 8 servings). An 8-inch dish will also work.
Storage: Allow the crumble to cool completely, then cover and store in the fridge for up to 4โ€“5 days. Reheat individual portions in the microwave before serving.
Freezing: You can freeze baked crumble for up to 2 months. Thaw overnight in the fridge and reheat before serving.
Peach Options: Fresh peaches work best, but you can also use canned (well drained) or frozen (thawed and drained) peaches.
Serving Suggestions: Serve warm with dairy-free or regular vanilla ice cream, whipped cream, or hot custard.
Top Tip: If your peaches are very juicy, add an extra teaspoon of cornstarch to help thicken the filling.
