Preheat your oven to 350°F (180°C). Grease and line a loaf pan with parchment paper. Clipping the overhang to the pan will keep it in place and also make it easier to lift out once the cake is baked.

Toss the dried cranberries in 1 tbsp cake flour. This helps stop them from sinking to the bottom of the loaf.

Make the batter
In a large mixing bowl, combine the sugar, cake flour, plant-based butter, eggs, baking powder, lemon zest, and floured cranberries. Mix until a thick, smooth batter forms.

Fill the pan
Spoon the batter into your prepared loaf pan and gently tap it on the counter to level.

Bake
Bake for 45 to 50 minutes. I love using our toaster oven to bake as it’s much more convenient for a small loaf cake.

The cake is ready when it is well risen and lightly golden. You can also use a toothpick to check. Simply insert it into the centre of the cake, then remove it. If any loose batter remains on the toothpick, continue baking for 3 more minutes, then check again.

Add the glaze
While the cake is still warm, mix the lemon juice and sugar together until the sugar dissolves.

Pour over the loaf. This creates a sweet, slightly crisp glaze that soaks into the cake.

- 100 grams White Sugar
Instructions
- Preheat oven to 350F (180C) and gather all ingredients. Eggs and butter needs to be at room temperature. Grease and line a loaf pan with parchment paper.
- Toss 175 grams Dried Cranberries in 1 tbsp Cake Flour and set aside. This prevents the cranberries from sinking in the batter while baking.
- Combine 175 grams White Sugar, 175 grams Cake Flour, 175 grams Plant Based Butter (unsalted), 3 Eggs, 3/4 tsp Baking Powder, Zest from 1 Lemon, and the floured cranberries in a mixing bowl until a thick batter forms.
