This lemon cranberry loaf cake is bright, zesty, and perfectly sweet, plus it’s incredibly easy to make in just one bowl. Packed with tangy lemon flavour and bursts of chewy cranberries, this soft dairy-free loaf cake is finished with a simple lemon glaze that soaks right into the warm cake for maximum flavour.

Originally developed back in 2020 and featured in my very first YouTube video, this tried and tested recipe has stood the test of time. It is a family favourite that is perfect for spring baking, afternoon tea, or whenever you are craving something fresh and citrusy. I usually bake one for myself when I’m making banana bread for the kids, as both pans fit in the oven at the same time.

Best of all, it is completely dairy-free, with easy options to make it gluten-free or egg-free, so everyone can enjoy a slice.

For the Cake

Cake Flour – This gives the loaf its soft, tender crumb thanks to its lower protein content. To make your own, follow my how-to guide. Substitution: Use all-purpose flour if needed, but the texture will be slightly denser. Gluten-free option: Use a 1:1 gluten-free flour blend with xanthan gum for the best structure.

White Sugar – Provides sweetness, moisture, and structure. It also helps create that lightly golden crust. You can slightly reduce it, but it may affect texture and softness.

Plant-Based Butter (Unsalted) – Adds richness, moisture, and flavour while keeping the recipe dairy-free. Make sure it is at room temperature for easy mixing. Avoid spreadable tub butter alternatives if possible.

Eggs – Eggs provide structure, binding, and lift, helping the cake rise and hold together. Vegan option: Use 3 flax eggs (1 tbsp ground flax + 2.5 tbsp water per egg) or use a reliable egg replacer. Baking Powder – This is your leavening agent, giving the loaf its rise and lightness.

Lemon Zest – Adds intense citrus flavour without extra liquid. This is where most of the lemon aroma comes from, so do not skip it.

Dried Cranberries – Bring chewy texture and bursts of tart sweetness that balance the lemon perfectly. Variation: Fresh cranberries can be used for a sharper, more tart flavour. Chop them slightly before adding.

For the Lemon Glaze

How to Make Lemon Cranberry Loaf Cake

This easy, no-fuss lemon loaf cake recipe comes together quickly in one bowl.

Prep your oven and pan
Preheat your oven to 350°F (180°C). Grease and line a loaf pan with parchment paper. Clipping the overhang to the pan will keep it in place and also make it easier to lift out once the cake is baked.

Coat the cranberries
Toss the dried cranberries in 1 tbsp cake flour. This helps stop them from sinking to the bottom of the loaf.

Make the batter
In a large mixing bowl, combine the sugar, cake flour, plant-based butter, eggs, baking powder, lemon zest, and floured cranberries. Mix until a thick, smooth batter forms.

Fill the pan
Spoon the batter into your prepared loaf pan and gently tap it on the counter to level.

Bake
Bake for 45 to 50 minutes. I love using our toaster oven to bake as it’s much more convenient for a small loaf cake.

The cake is ready when it is well risen and lightly golden. You can also use a toothpick to check. Simply insert it into the centre of the cake, then remove it. If any loose batter remains on the toothpick, continue baking for 3 more minutes, then check again.

Add the glaze
While the cake is still warm, mix the lemon juice and sugar together until the sugar dissolves.

Pour over the loaf. This creates a sweet, slightly crisp glaze that soaks into the cake.

Cool and serve
Let the cake cool for 10 minutes before removing it from the pan. Transfer to a cutting board, slice, and enjoy.

Baking Tips for the Best Loaf Cake

A few simple tips will guarantee success:

  • Use room temperature butter and eggs for a smooth batter
  • Do not skip tossing the cranberries in flour
  • Avoid overmixing. Mix just until combined
  • Pour the glaze while the cake is still warm, so it absorbs properly
  • Check doneness with a skewer. It should come out clean

Can I Bake This in a Toaster Oven?

Yes – this loaf cake fits perfectly in a countertop or toaster oven, making it a great option when you do not want to use your main oven. Just ensure:

  • Your toaster oven is properly preheated
  • The loaf pan has enough airflow around it for even baking
  • You check the cake a few minutes early, as smaller ovens can vary

Storage Tips

To keep your loaf cake fresh, store it in an airtight container at room temperature for up to 3 days. If your kitchen is on the warmer side, you can also pop it in the fridge for up to 5 days and bring it back to room temperature before serving.

Prefer to save for future cravings? Individually wrap the slices, then freeze them in an airtight container for up to 2 months. Allow to defrost at room temperature – reheating in the microwave adds that just-baked warmth to the slices.

    Why did my cranberries sink?

    They were likely not coated in flour. This step helps suspend them in the batter.

    Can I reduce the sugar?

    You can slightly reduce it, but keep in mind the glaze adds a lot of the signature flavour.

    Can I skip the glaze?

    You can, but it really enhances the lemon flavour and texture, so it is recommended.

    Can I make this loaf ahead of time?

    Yes. It tastes even better the next day as the glaze soaks in and the flavours develop.

    Why is my loaf dense?

    This is usually caused by overmixing or using cold ingredients. Make sure your butter and eggs are at room temperature and mix just until combined.

    Can I use bottled lemon juice?

    Fresh lemon juice is recommended for the best flavour, especially in the glaze.

    What size loaf pan should I use?

    A standard 9 x 5 inch loaf pan works best. If using a smaller pan, adjust baking time accordingly.

    How do I know when it is done baking?

    Insert a skewer into the centre. If it comes out clean or with a few crumbs, it is ready.

    Can I double this recipe?

    Yes. You can double it and bake in two loaf pans, which is great for batch baking or freezing one for later.

    Weigh your dry ingredients in grams with a scale for best results!

    Ingredients
      

    • 1 tbsp Cake Flour (for tossing the fruit)
    • 175 grams Dried Cranberries
    • 175 grams White Sugar
    • 175 grams Cake Flour
    • 175 grams Plant Based Butter (unsalted)
    • 3 Eggs
    • ¾ tsp Baking Powder
    • Zest from 1 Lemon
    • Juice from 1 Lemon
    • 100 grams White Sugar

    Instructions
     

    • Preheat oven to 350F (180C) and gather all ingredients. Eggs and butter needs to be at room temperature. Grease and line a loaf pan with parchment paper.
    • Toss 175 grams Dried Cranberries in 1 tbsp Cake Flour and set aside. This prevents the cranberries from sinking in the batter while baking.
    • Combine 175 grams White Sugar, 175 grams Cake Flour, 175 grams Plant Based Butter (unsalted), 3 Eggs, 3/4 tsp Baking Powder, Zest from 1 Lemon, and the floured cranberries in a mixing bowl until a thick batter forms.
    • Add the batter to the prepared loaf pan and tap on the counter a few times to settle the batter.
    • Bake for 45-50 minutes until well risen and lightly golden on top.
    • Remove the pan from the oven and set aside. Quickly mix together the Juice from 1 Lemon and 100 grams White Sugar to form a glaze and pour over the warm loaf cake.
    • Cool for 10 minutes before removing from the pan and transferring to a cooling rack. Slice and serve!
