Festive cake balls are a great way to use leftover cake and buttercream and you can jazz them up really easily by adding different flavours and fancy toppings.
Why I Made This Recipe
I recently made a carved cake for our son’s birthday and wanted to use the offcuts to make some festive cake balls (also known as cake pops).
Why You Need This Recipe
This is a great way to use up leftover cake and buttercream and a nice addition to your holiday baking. If you do not have cake offcuts available, make up a batch of my vanilla cupcakes or my 8 inch vanilla cake. See my FAQ section for more suggestions.
Ingredients and Substitutions
You can use any cake and buttercream for this recipe. I used offcuts from my vanilla cake recipe, some vanilla buttercream, festive sprinkles and vegan chocolate chips.
How to Make Festive Cake Balls
Crumble the cake offcuts in a mixing bowl until they resemble breadcrumb consistency. Stir in buttercream and sprinkles (if desired) until the cake crumbs are combined.
Form into balls and place on a lined baking tray. I highly recommend using an ice cream scoop so that the balls will be a similar size. Chill in the fridge on a lined baking tray for 1 hour until firm. If you are short on time, flash freeze in the freezer instead.
Melt the chocolate chips in a bowl in the microwave, checking and stirring at 30-second intervals.
Dip the cake balls, one at a time, in the chocolate and use a fork to turn them to ensure they are fully coated. Place back on the tray and add sprinkles as desired.
Allow the chocolate to fully set before eating. Look how festive they are! I added crushed candy canes to some of the cake balls. So good!
Let’s cut one in half so you can see what they look like inside. There’s a nice ratio of chocolate to cake and I love the subtle pops of colour from the sprinkles as well. Perfect to add to your holiday cookie trays.
Common Questions
The number of cake balls that you will be able to make will depend on the amount of cake offcuts that you have.
Absolutely! Add flavouring to the cake crumbs and buttercream mixture if you wish to flavour the cake balls. These also work well with chocolate buttercream.
Not at all. Use your favourite cake recipe as the base for the cake balls. I love making these with my red velvet cupcake recipe.
Once the chocolate has set, the balls can be stored at room temperature in an airtight container for up to 1 week. You can also store in the fridge or freezer if you prefer.
